There are a lot of great recipes out there, but if you want to try something healthy AND different, give chocolate chip pumpkin bread a shot! Using egg whites versus the egg yolk in this recipe will greatly reduce the amount of cholesterol consumed with each serving. This recipe makes a GREAT fall breakfast, or even mid-afternoon snack and only contains 152 calories per serving! Courtesy of Health.com, the recipe is as follows:

Chocolate Chip Pumpkin Bread

Ingredients: 2 cups sugar, 2 cups canned pumpkin, 1/2 cup canola oil, 1/2 cup fat-free vanilla pudding, 4 large egg whites, 3 cups all-purpose flour, 2 teaspoons ground cinnamon, 1 1/4 teaspoons salt, 1 teaspoon baking soda, 1 cup semisweet chocolate chips, cooking spray.

Directions: Preheat oven to 350 degrees. Combine sugar, pumpkin, canola oil, pudding, and egg whites into a large bowl. Stir well using a whisk. In a separate medium-sized bowl, combine flour, cinnamon, salt, and baking soda. Stir well with whisk. Add flour mixture to pumpkin mixture and stir until moistened. Mix in chocolate chips. Spray 2 (8 x 4-inch) baking dishes with cooking spray, then spoon batter evenly into both pans. Place uncovered in preheated oven and bake for 1 hour and 15 minutes. Remove from over and let cool for 15 minutes before cutting and serving. Enjoy!
